Ingredients

  • 2 cups Toss’d Bites Almonds
  • 2 tablespoons honey
  • 1 tablespoon melted butter or ghee
  • ½ teaspoon sea salt
  • ¼ teaspoon chilli powder (optional)

Method

  1. Warm the pan: Place a wide, heavy-bottomed pan or skillet over low to medium heat. Add the almonds and dry roast for 4–5 minutes, stirring frequently until they become fragrant and lightly golden.
  2. Prepare the coating: Push the almonds to one side of the pan. Add the ghee or butter and let it melt. Add the honey, and chilli powder if using. Mix quickly.
  3. Coat the almonds: Toss everything together until the almonds are evenly coated in the honey mixture.
  4. Caramelize: Keep the heat on low and continue stirring for 2–3 minutes. The honey will start to caramelize and coat the almonds.
  5. Add the salt: Turn off the heat and immediately sprinkle with sea salt. Toss once more.
  6. Cool: Transfer the almonds to a plate or sheet of parchment paper, separating them as much as possible. Allow them to cool completely. The coating will crisp up as it cools.

The Secret to Crunchy Almonds

Keep the heat low once you add the honey. High heat can make the honey burn before it has a chance to caramelize beautifully.

And don’t worry if the almonds seem slightly sticky when they’re hot — they’ll become much crunchier once completely cooled.
